Chilli Farming
Chilli is one of the most loved and most valuable crops of India. The crop is grown largely for its fruits all over india and mostly in clean and fresh environment of villages. It is used in India as a the most important ingredient of various curries and chutneys. It is also used for spices, vegetables,condiments,sauces and pickeles.Dry chillies are used mostly to make powder. Red color in chili is due to “Capsanthin”.Pungency in chillies is due to the active constituent “Capsaicin”, an alkaloid,es extracted from chillies and is used as medicine.
Chilli Harvesting
Chillies are harvested at red stage for caning purpose. Chillies used for drying is harvested at full ripe-stage which is turned into chilli powder. If the chilli has changed color, we usually wait 5 days before picking. We give it the time to produce more fructose and capsaicin for the pungency. We use ancient methods to dry our chillies which is a great way to preserve our bumper harvests and perfect for intensifying the flavour of our chillies. Chillies are dried in bright sunlight and bought to our processing unit directly from farms. We use clean area for spreading out the chillies for letting it dry in the sun. We do Frequent turning which is required for even drying.
